What is kombucha?

Kombucha is a probiotic tea, cultured from billions of microorganisms, aiding digestion and body detoxification. Kombucha is known in China as an “immortal health elixir,” and has been brewed in the east for more than 2000 years.


What’s in it?

How is it made?

A blend of tea and fruit is fermented together to create a bubbly champagne-like probiotic cocktail. It usually takes about two weeks from start to finish.


Why is this bottle of kombucha different from my last?

With kombucha, each batch we create is a little different, since kombucha is a naturally cultured product. It’s not like a soda where you can create one recipe and have it come out exactly the same every time. Many factors, including summer heat, fruit sugar concentrations, and culture diversity, means we have to constantly tweak our production process to ensure a relatively consistent product. Even so, it is natural for each batch to be unique in terms of carbonation, flavor, and sweetness among other things. We are constantly refining our production process to bring you the best kombucha we can make.


How long is it good for?

The date printed on the bottle is for 6 months out from the production date. It needs to be constantly refrigerated.


What’s the stuff at the bottom of bottle?

The process of brewing kombucha includes using a SCOBY (Symbiotic Colony Of Bacteria and Yeast), green and black tea, as well as natural fruit puree. All of these things contribute to the yeast particles found to varying degrees in each bottle. The yeast particles does not have much of a flavor and can be strained out but is also perfectly healthy to drink. Also, see our entry answering “How is it made?”


What are the health benefits of kombucha?

While we do not make any health claims for kombucha, there is quite a bit of anecdotal evidence suggesting its benefits. There are also a number of online blogs and such that describe some of the benefits in more detail. What’s the caloric/caffeine/sugar/alcohol content of Luna Kombucha?

We have not done any kind of food nutrition panel for any of the Luna Kombucha beverages. Though we do not have any specific numbers at this time, we believe the caffeine is neutralized through the fermentation process. Much of the sugar we put in to make the kombucha, get’s consumed by the microorganisms. As for alcohol content, the original Luna flavors range from 0.5-1.5% ABV, the higher ABV (such as Bluebird) are between 5 and 6% ABV, and the Luna with hops are 7-8% ABV. It is also important to note, that since each batch of kombucha still contains live unpasteurized yeast particles, it continues to ferment even after bottling.
